There’s the tiniest window of time each spring when the maple tree finds the optimal conditions for its sap to flow. This year a small group of Omni Executive Chefs converged on the “sugar bushes” of Vermont at exactly the right time to discover The Magic of Maple, and were delighted to find nature putting on a show as the trees delivered their precious natural sweetener.
Maple sugar harvesting conditions require freezing temperatures at night, and greater than 40 degrees during the day. And in that small window of time the vast majority of the world’s maple producers, all found in the northeastern area of North America, are ready to collect nature’s sugar for use in a multitude of products including, of course, maple syrup.
This year Omni partners with the International Maple Syrup Institute to discover the heritage, versatility, eco-friendly sustainability, nutritional benefits and varying flavor potential of maple. Our executive chefs spent four days on a “maple immersion” in Vermont and Québec witnessing maple sugar extraction and its transformation to different grades of syrup, and learning cooking techniques with various maple flavor profiles.
