Jackfruit Tacos al Pastor


  • 6 oz. Jackfruit al Pastor marinated
  • 2 White corn or flour tortillas
  • 2 tbsp. Diced white onion
  • 2 Radishes, fresh shaved or sliced
  • 1 tbsp. Cilantro
  • 3 tbsp. Salsa Verde
  • 3 tbsp. Passion Fruit Salsa
  • 1 Lime wedge


  • Cook jackfruit al pastor on a cast iron pan or over an open flame with foil on the grill until the jack fruit is caramelized and hot through
  • Heat tortillas
  • Place hot jack fruit in tortilla with salsa verde and passion fruit salsa
  • Top with onions, radish, cilantro and lime

Passion Fruit Salsa

Combine 1 habanero pepper (sliced), 5 oz. of passion fruit puree, and 1 tbsp. of lime juice in a blender. Blend until smooth. Add oil by hand, top with cilantro and serve.

Jackfruit al Pastor

Toast 1 Ancho chilie and 1 Guajilo pepper lightly in a cast iron pan until fragrant. Cover with boiling hot water, wrap and let sit off the burner until peppers are soft. Drain and reserve liquid.

In a blender, combine half a chipotle pepper, 1 tbsp. oil, cooked chilies and peppers, 1/2 tsp. fresh toasted cumin seeds, 1 tbsp. achiote, and 1 oz. of distilled white vinegar. Blend until a smooth paste/marinade is made. Add reserve liquid as needed until it looks like a dressing. Combine with Jackfruit and marinate over night.

Smoked Baby Back Ribs


  • 2 lbs. Bone in Baby Back Ribs
  • 4 tbsp. BBQ Sweet & Spicy Rib Rub
  • 1 1/4 cup Ketchup
  • 1 cup Dark Brown Sugar
  • 1 1/4 cup Molasses
  • 1/2 cup Passion Fruit Puree
  • 2 1/2 tsp. Ground Mustard
  • 2 tsp. Paprika
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Cayenne Pepper
  • 1 1/2 tsp. Sea Salt
  • 1 tsp. Smoked Black Pepper
  • 2 Fresh Passion Fruits



Pre-heat smoker to 250 degrees. Rub both sides of ribs with spice blend, mist with a little apple juice or water, and wrap tightly in foil. Place on sheet pan and cook in smoker for 2-4 hours until meat is tender. Remove from smoker and increase temperature to 350 degrees or you can grill ribs over an open flame BBQ. Unwrap ribs and drain any juice into BBQ sauce. Brush ribs with Passion Fruit BBQ Sauce and finish grilling until charred or caramelized crust forms on the ribs (10-20 minutes). Slather BBQ sauce on throughout. Remove from grill, slice and serve with additional sauce.

BBQ Sauce

Add all ingredients except for the fresh passion fruit puree to a small sauce pan and bring ingredients to a simmer. Cook sauce until it reduces to a nice glaze. Add water as necessary. Once desire consistency is reached, add passion fruit puree. Remove from heat and serve.

Passion Fruit Yogurt Pop


Passion Fruit Curd


  • 3 oz. Passion Fruit puree
  • 2 oz. Butter, unsalted
  • 5 oz. Sugar, white
  • 4 oz. Egg yolks
  • 4 oz. Eggs, whole liquid
  • 1/2 tsp. Passion Fruit Compound


Have a food thermometer ready. Combine all ingredients in a heavy bottomed sauce pot. Over low heat, cook until mixture thickens and reaches around 180 degrees F, whisking constantly to prevent scorching. Remove from heat immediately and strain through a fine mesh strainer over a pan with ice in it, stirring constantly until room temperature. Refrigerate over night wrapped. 

Passion Fruit Pops

Combine 3 oz. of passion fruit curd with 1/2 cup of plain Greek yogurt. Portion into popsicle molds and insert popsicle sticks. Freeze until solid over night. Melt together 2.5 oz. of white chocolate with 1/2 oz. of coconut oil. Cool and dip pops into glaze. Let harden and stripe with dark chocolate.

Peachy Passion Freeze


  • 1.5 oz. Belvedere Peach Nectar
  • 2 oz. RE'AL Peach
  • 2 oz. Island Oasis Passion fruit
  • 0.5 oz. lemon juice
  • Garnish: Peach slice + mint sprig


  • Combine all the ingredients in a blender cup
  • Add shaved ice for one drink and blend until smooth
  • Pour into cup
  • Garnish and serve

Passion Fruit Refresher


  • 1.5 oz. of Aviation Gin
  • 0.5 oz. lemon juice
  • 0.5 oz. Monin Vanilla
  • 1.5 oz. Island Oasis Passion fruit
  • 1.5 oz. Ruffino Prosecco
  • Garnish: Orange peel


  • Combine all the ingredients (except the prosecco) in a cocktail shaker with ice
  • Shake vigourously
  • Add the prosecco in an ice filled cup
  • Strain shaken contents on top
  • Garnish and serve

Ruby Red Rejuvenator


  • 1.5 oz. Deep Eddy Ruby Red Grapefruit
  • 0.75 oz. lime juice
  • 0.75 oz. RE'AL passion fruit
  • 0.25 oz. Monin Pure Cane
  • 2 oz. Q Grapefruit soda


  • Combine all of the ingredients (except the grapefruit soda) in a cocktail shaker with ice
  • Shake vigorously
  • Strain into iced cup
  • Top with Q Grapefruit soda and stir well
  • Garnish and serve
