Vacationers transform into French cuisine connoisseurs, sampling Sautéed Sea Scallops prepared Provencal Style; Duck Breast with Roasted Vegetables in a Raspberry Balsamic Reduction and Steak Pommes-Frites with a Black Pepper and Cognac Sauce, available in the Lobby Lounge or at Ocean Grill. Designed to capture the senses, the authentic menu was developed after the resort’s food and beverage director, Thomas Turner, and 39 other Chef's and Food and Beverage directors embarked on an immersion trip into the vibrant city life of Paris and the beauty of the French wine country to learn about food, wine, family and most importantly the French terroir.
Attending Palaise des Thés tea training in Paris; visiting caves at famed Champagne makerNicolas Feuillatte and winemaker Maison Champy in Burgundy; touring vineyards and participating in the harvest in the Loire Valley and Bordeaux including Domaine Pascal Jolivet, Domaine de la Perriére, Le Club Mouton Cadet, Château Belgrave and Château Cantemerle; learning about mustard preparation with Moutard Fallot and dining along the Seine River overlooking the Eiffel Tower offered an authentic experience to draw culinary inspiration from. Guests can depart with a token of France after visiting French market, Marché Burrette on-property at the Shops of Amelia Island Plantation.
