Chef Dirk Troop began his culinary career in the dish pit at the age 13 in Lancaster, PA. He knew he had a calling, for rock and roll music, but a chance encounter with the chef at Smoking Jake’s BBQ saw a spark in him that is now undeniable. At the age of 19, Troop began training in classical cooking, which led him to an apprenticeship at the Greenbrier Hotel and Resort in West Virginia and a second apprenticeship at the Duquesne Club of Pittsburgh. He attended the Culinary Institute of America in Hyde Park, NY. Since graduating with a Bachelors Degree in 1999, he has held Executive Chef Positions in Puerto Rico, Costa Rica and Texas. Chef Troop has spent years developing his skills and innovating dishes that are signatures of his cooking today. Chef Troop influences range from regional American, Caribbean, Asian Pacific and Latin cuisines. Troop has replanted roots in Texas, working for the Omni Austin Hotel Downtown. He is a Certified Executive Chef with the American Culinary Federation and has many passion projects ahead for Omni Austin Hotel Downtown.
