On Amelia Island, the freshest catch is always the one you reeled in yourself. Set sail on a private, three-hour fishing expedition with a local fishing captain and one of the resort chefs to see what bounty the water holds. Cast your line for delicious local species, including Atlantic grouper, red drum, black sea bass, flounder and skate. Then return to the resort for a private cooking session where you’ll prepare a signature dish with your very own catch.
